VALPOLICELLA D.O.C. SUPERIORE VARIETY: Corvina, Rondinella and Molinara. VINEYARDS: Situated in the hills of the Val d’Illasi and Cazzano di Tramigna zones. VINIFICATION: The grapes are pressed in about mid-October. They are then stemmed and on-skin fermented in small steel containers with continuous pressing; a part is oak ageing. TASTING NOTES: Colour: medium intense ruby red. Aroma: characteristic delicate cherry blossom perfumes and vanilla. Taste: dry, good structure and body, well-knit fruit and acidity. Alcohol content: 12% vol. FOOD AND WINE MATCHING: This is the classic wine for all occasions. SERVE: Serve in typical “Burgundy” goblets at a temperature of 16-18°C.
