AMARONE DELLA VALPOLICELLA D.O.C. VARIETIES: Corvina, Corvinone and Rondinella. VINEYARDS: Situated in the hilly area of Val d’Illasi and Cazzano di Tramigna. VINIFICATION: This is the most famous red wine in Verona. The best bunches are picked by hand at the beginning of October. After drying naturally in “fruttai” (fruit storage rooms), towards the end of January the grapes are crushed and left to ferment in steel tanks. After racking off, the wine is aged partly in Slavonia oak barrels and partly in barriques. Then the wine spends another six months maturing in bottle. TASTING NOTES: Colour: intense, deep ruby red and clear, tending to garnet. Perfume: complex, with perfumes of red and blackcurrant, cocoa and spices. Taste: rich, full-bodied and sophisticated, warm and appealing, soft and excellent length. Alcohol content: 14.5 % vol. FOOD MATCHING: It is excellent with rich roasts, elaborate meat dishes, game, aged cheeses and also on its own, after a meal. SERVE: Serve in “balloon” glasses at a temperature of 18° C. uncork one hour before serving.
